- 2 lbs beef chuck roast
- 1 cup stout beer
- 2 medium sweet onions, diced
- 2 large carrots, sliced
- 4 cloves garlic, minced
- 2 cups low-sodium beef broth
- 1 sheet high-quality puff pastry
- 1 tbsp fresh thyme (or 1 tsp dried thyme)
- Salt and pepper to taste
- 2 tbsp extra virgin olive oil
Instructions
- Preheat oven to 400°F (200°C).
- In a large pot, heat olive oil over medium-high heat. Season beef with salt and pepper; sear until browned on all sides (about 3-4 minutes per side). Remove from pot.
- Add onions and garlic to the same pot; sauté until onions are translucent (about 5 minutes).
- Stir in carrots; cook for an additional 3-4 minutes.
- Deglaze with stout, scraping up bits from the bottom of the pot; simmer for 2 minutes.
- Return beef to pot along with broth and thyme. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours until meat is tender.
- Transfer filling into a baking dish; cover with rolled-out puff pastry, cutting slits for ventilation.
- Bake for 25-30 minutes until golden brown.
