  • 2 lbs beef chuck roast
  • 1 cup stout beer
  • 2 medium sweet onions, diced
  • 2 large carrots, sliced
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 sheet high-quality puff pastry
  • 1 tbsp fresh thyme (or 1 tsp dried thyme)
  • Salt and pepper to taste
  • 2 tbsp extra virgin olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large pot, heat olive oil over medium-high heat. Season beef with salt and pepper; sear until browned on all sides (about 3-4 minutes per side). Remove from pot.
  3. Add onions and garlic to the same pot; sauté until onions are translucent (about 5 minutes).
  4. Stir in carrots; cook for an additional 3-4 minutes.
  5. Deglaze with stout, scraping up bits from the bottom of the pot; simmer for 2 minutes.
  6. Return beef to pot along with broth and thyme. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours until meat is tender.
  7. Transfer filling into a baking dish; cover with rolled-out puff pastry, cutting slits for ventilation.
  8. Bake for 25-30 minutes until golden brown.
