  • 8 oz whole wheat pasta (fusilli or your choice)
  • 4 cups baby spinach
  • 1 cup ripe strawberries, sliced
  • ½ cup crumbled feta cheese
  • ½ cup walnuts, toasted
  • ¼ cup extra virgin olive oil
  • 3 tbsp balsamic vinegar
  • 1 tbsp honey or maple syrup (adjust to taste)
  • Salt and pepper to taste

Instructions

  1. Prepare the pasta by boiling salted water in a large pot. Cook whole wheat pasta until al dente (about 8-10 minutes). Drain and rinse under cold water.
  2. In a large bowl, combine baby spinach and sliced strawberries.
  3. Whisk together olive oil, balsamic vinegar, honey/maple syrup, salt, and pepper in a small bowl.
  4. Add cooled pasta to the bowl of spinach and strawberries. Pour dressing over the mixture and toss gently until coated.
