  • 1 cup moist prunes, chopped
  • 4 cloves garlic, minced
  • 1 medium yellow onion, diced
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh rosemary, chopped
  • ½ cup toasted pine nuts
  • 1 cup low-sodium chicken broth
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Pat the pork loin dry.
  2. In a skillet over medium heat, add olive oil. Sauté garlic and onion until golden (about 3-4 minutes).
  3. Stir in prunes, pine nuts, thyme, rosemary, salt, and pepper. Cook until well combined.
  4. Slice the pork loin lengthwise to create a pocket for stuffing. Fill it with the mixture and tie it securely with kitchen twine.
  5. Place the roast in a baking tray and pour chicken broth around it. Roast for about 1 hour or until the internal temperature reaches 145°F (63°C).
  6. Let the roast rest for 10-15 minutes before slicing.
