- 15 oz can chili beans, drained
- 14.5 oz can fire-roasted diced tomatoes
- 2 cups shredded sharp cheddar cheese
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup bell peppers, diced (any color)
- 1 cup milk or cream
- Salt and pepper to taste
Instructions
- Cook the macaroni according to package instructions until al dente. Drain and reserve some cooking water.
- In a skillet, heat olive oil over medium heat. Sauté onions and garlic until translucent (3-4 minutes).
- Add ground meat to the skillet and cook until browned. Stir in bell peppers and cook until tender (about 5 minutes).
- Mix in chili beans, diced tomatoes, spices, salt, and pepper; simmer for about 10 minutes.
- Lower heat and gradually stir in milk or cream followed by shredded cheese until melted. Add reserved pasta water if needed for creaminess.
- Combine the cooked macaroni with the chili cheese mixture until well coated. Serve immediately or transfer to a baking dish for oven-baked finishing.
