  • 8 oz elbow macaroni
  • 1 lb lean ground beef or turkey
  • 15 oz can chili beans, drained
  • 14.5 oz can fire-roasted diced tomatoes
  • 2 cups shredded sharp cheddar cheese
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup bell peppers, diced (any color)
  • 1 cup milk or cream
  • Salt and pepper to taste

Instructions

  1. Cook the macaroni according to package instructions until al dente. Drain and reserve some cooking water.
  2. In a skillet, heat olive oil over medium heat. Sauté onions and garlic until translucent (3-4 minutes).
  3. Add ground meat to the skillet and cook until browned. Stir in bell peppers and cook until tender (about 5 minutes).
  4. Mix in chili beans, diced tomatoes, spices, salt, and pepper; simmer for about 10 minutes.
  5. Lower heat and gradually stir in milk or cream followed by shredded cheese until melted. Add reserved pasta water if needed for creaminess.
  6. Combine the cooked macaroni with the chili cheese mixture until well coated. Serve immediately or transfer to a baking dish for oven-baked finishing.
