  • 1 cup low-sodium beef broth
  • 4 medium Yukon Gold potatoes (peeled and cubed)
  • 4 tbsp butter
  • ¼ cup milk
  • Salt and pepper to taste
  • Fresh herbs (e.g., thyme or rosemary)

Instructions

  1. Chop onions, dice carrots, and mince garlic.
  2. In a skillet, heat olive oil over medium heat. Add onions; cook until translucent. Stir in garlic.
  3. Add ground lamb or beef; brown thoroughly. Mix in tomato paste and herbs.
  4. Pour in beef broth, then add diced carrots and peas. Simmer for about 10 minutes until slightly thickened.
  5. Boil cubed potatoes in salted water until fork-tender (about 15 minutes). Drain and mash with butter and milk.
  6. Preheat oven to 400°F (200°C). Layer meat mixture in a baking dish, top with mashed potatoes, smoothing them out.
