Description

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/2 cup sweet chili sauce
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp freshly squeezed lime juice
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1/4 tsp black pepper
  • 3 green onions, chopped (for garnish)

Instructions

  1. In a bowl, mix sweet chili sauce, soy sauce, lime juice, olive oil, minced garlic, and black pepper until smooth.
  2. Add chicken breasts to the marinade and coat well. Let marinate for at least 30 minutes.
  3. Preheat grill to medium-high heat (375°F or 190°C).
  4. Remove chicken from marinade (reserve marinade) and place on grill. Cook for about 6-7 minutes per side or until internal temperature reaches 165°F (75°C).
  5. Brush additional sweet chili sauce on chicken in the last few minutes of grilling.
  6. Transfer grilled chicken to a platter and let rest for five minutes before slicing.
  7. Garnish with chopped green onions and serve with rice or salad.
