  • 1 lb lean ground beef
  • 1 cup panko breadcrumbs
  • 1 large egg
  • 1 tsp garlic powder
  • 1 cup sweet chili sauce
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp rice vinegar

Instructions

  1. In a large bowl, mix ground beef, panko breadcrumbs, egg, garlic powder, and a pinch of salt until well combined.
  2. Shape the mixture into 1-inch meatballs.
  3. In another bowl, whisk together sweet chili sauce, soy sauce, and rice vinegar.
  4. Layer half of the meatballs in a crockpot, pour half of the sauce over them, then repeat with remaining meatballs and sauce.
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. Serve warm with toothpicks or over rice.
