  • 1 cup bell peppers (sliced)
  • 1 cup broccoli florets
  • 1 cup carrots (thinly sliced)
  • 1/4 cup green onions (chopped)
  • 2 tbsp sesame seeds (toasted)
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 2 tsp sesame oil
  • 1 tsp fresh ginger (minced)
  • 2 cloves garlic (minced)

Instructions

  1. Prepare your ingredients by washing and slicing the vegetables into bite-sized pieces.
  2. Marinate the chicken by combining it with soy sauce, ginger, garlic, and brown sugar in a bowl. Allow it to marinate for at least 15 minutes.
  3. Heat oil in a large skillet over medium-high heat. Add bell peppers, broccoli, and carrots; stir-fry for about 3-4 minutes until tender-crisp.
  4. Push the vegetables to one side of the skillet and add the marinated chicken. Cook until golden brown on both sides, about 6-8 minutes.
  5. Pour in the teriyaki sauce mixture over the chicken and vegetables; toss well to coat evenly.
  6. Garnish with toasted sesame seeds and chopped green onions before serving hot over rice or noodles.
