  • 1 lb lean ground beef
  • 1 cup fresh Thai basil leaves, chopped
  • 8 rice paper wrappers
  • 1 cup shredded carrots
  • 1 cup thinly sliced cucumbers
  • 3 tbsp low-sodium soy sauce
  • 2 cloves garlic, minced

Instructions

  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat if needed and add minced garlic; cook until fragrant (about 1 minute).
  2. Stir in soy sauce and chopped Thai basil; simmer for 2 minutes to meld flavors.
  3. While cooling, prepare vegetables by shredding carrots and slicing cucumbers.
  4. Soak each rice paper wrapper in warm water until pliable (about 10 seconds), then lay flat.
  5. Place about 2 tablespoons of the beef mixture on one edge of the wrapper; top with carrots and cucumbers. Fold sides in and roll tightly.
  6. Serve alongside a dipping sauce made from soy sauce, lime juice, minced garlic, and chili flakes.
