- 4 green onions, chopped (separate white and green parts)
- 1 red bell pepper, diced
- 1 medium carrot, grated
- 2 tbsp low-sodium soy sauce
- 1 tsp sesame oil
- Juice of 1 lime
- Lettuce leaves (Bibb or iceberg)
Instructions
- Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add minced garlic and sauté until fragrant (about 1 minute).
- Add diced chicken to the skillet; cook until browned and no longer pink (approximately 5-7 minutes).
- Stir in the white parts of green onions, red bell pepper, and grated carrot; cook for another 3-4 minutes until veggies soften.
- In a bowl, whisk together soy sauce, sesame oil, and lime juice. Pour over the chicken mixture; stir for about 2 minutes until well coated.
- Wash and dry lettuce leaves. Spoon the chicken mixture into each leaf and fold like a taco.
