- 14 oz firm tofu
- 1 cup panko breadcrumbs
- 2 tbsp curry powder
- 1 cup coconut milk
- 2 tbsp vegetable oil (for frying)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 1 cup vegetable broth
- 2 tbsp soy sauce
- 1 tsp sugar
- 1 cup carrots, diced
- 1 cup peas
Instructions
- Press the tofu between paper towels to remove excess moisture and cut it into thick slices.
- Coat each tofu slice in flour, then dip in beaten eggs (or vegan equivalent), and roll in panko breadcrumbs until fully coated.
- Heat vegetable oil in a skillet over medium heat. Fry the breaded tofu for about 3-4 minutes on each side until golden brown. Drain on paper towels.
- In another pot, heat oil over medium heat and sauté onions, garlic, and ginger until fragrant (about 5 minutes).
- Stir in curry powder, then add vegetable broth, coconut milk, soy sauce, sugar, carrots, and peas. Simmer for about 10 minutes until vegetables are tender.
- Serve crispy tofu katsu topped with the curry sauce and garnish as desired.
