  • 14 oz firm tofu
  • 1 cup panko breadcrumbs
  • 2 tbsp curry powder
  • 1 cup coconut milk
  • 2 tbsp vegetable oil (for frying)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 cup vegetable broth
  • 2 tbsp soy sauce
  • 1 tsp sugar
  • 1 cup carrots, diced
  • 1 cup peas

Instructions

  1. Press the tofu between paper towels to remove excess moisture and cut it into thick slices.
  2. Coat each tofu slice in flour, then dip in beaten eggs (or vegan equivalent), and roll in panko breadcrumbs until fully coated.
  3. Heat vegetable oil in a skillet over medium heat. Fry the breaded tofu for about 3-4 minutes on each side until golden brown. Drain on paper towels.
  4. In another pot, heat oil over medium heat and sauté onions, garlic, and ginger until fragrant (about 5 minutes).
  5. Stir in curry powder, then add vegetable broth, coconut milk, soy sauce, sugar, carrots, and peas. Simmer for about 10 minutes until vegetables are tender.
  6. Serve crispy tofu katsu topped with the curry sauce and garnish as desired.
