  • 4 large russet potatoes
  • 1 cup sour cream (full-fat)
  • 1 cup sharp cheddar cheese (shredded)
  • ½ cup cooked bacon bits
  • ¼ cup green onions (finely chopped)
  • 4 tbsp unsalted butter (melted)
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Lightly spray a baking dish with nonstick cooking spray.
  2. Wash and poke holes in the russet potatoes. Bake directly on the oven rack for about 45 minutes until tender.
  3. Allow potatoes to cool slightly, then cut in half lengthwise and scoop out most of the flesh into a bowl, leaving some for structure.
  4. Mash the potato flesh with sour cream, melted butter, garlic powder, half of the cheddar cheese, bacon bits, salt, and pepper until smooth.
  5. Spoon the mixture back into the potato skins or into the baking dish. Top with remaining cheddar cheese and extra bacon bits if desired.
  6. Bake at 375°F (190°C) for an additional 25-30 minutes until hot and bubbly.
