- 1/2 cup light corn syrup
- 1/2 cup water (filtered)
- 2 tablespoons unflavored gelatin powder
- 1/4 cup vanilla beans (seeds scraped from about 2 beans)
- 1/4 cup powdered sugar (for dusting)
- 1 tablespoon butter (for greasing the pan)
Instructions
- Grease an 8×8 inch baking pan with butter or non-stick spray.
- In a small bowl, combine gelatin with 1/4 cup cold water and let it bloom for about 5 minutes.
- In a saucepan over medium heat, combine granulated sugar, corn syrup, and remaining water. Stir until dissolved, then bring to a boil.
- Once the syrup reaches 240°F (115°C), remove from heat and whisk in bloomed gelatin until fully dissolved.
- Beat the mixture on high speed for 10-15 minutes until fluffy.
- Gently fold in scraped vanilla bean seeds and pour into the prepared pan.
- Allow to chill at room temperature for at least four hours or overnight before cutting into squares.
