  • 1 lb veal cutlets, thinly sliced
  • 8 oz fresh mushrooms (button or cremini), sliced
  • 3/4 cup dry Marsala wine
  • 1/2 cup low-sodium chicken broth
  • 23 cloves garlic, minced
  • 3 tbsp butter
  • 1 tbsp olive oil
  • Fresh parsley, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by slicing veal cutlets and chopping mushrooms and garlic.
  2. In a skillet over medium-high heat, combine olive oil and 1 tbsp butter until shimmering. Season veal cutlets with salt and pepper and sear for about 3 minutes on each side until golden brown. Remove from pan and set aside.
  3. Add remaining butter to the same skillet. Sauté mushrooms until golden brown, then add minced garlic; cook for an additional 30 seconds.
  4. Deglaze the pan with Marsala wine, scraping up any browned bits. Allow it to simmer slightly.
  5. Pour in chicken broth and simmer for about 5 minutes until the sauce thickens.
  6. Stir in an extra tablespoon of butter for richness, then return the veal to the pan just long enough to warm through.
  7. Serve hot, garnished with fresh parsley.
