- 1 lb veal cutlets, thinly sliced
- 8 oz fresh mushrooms (button or cremini), sliced
- 3/4 cup dry Marsala wine
- 1/2 cup low-sodium chicken broth
- 2–3 cloves garlic, minced
- 3 tbsp butter
- 1 tbsp olive oil
- Fresh parsley, chopped (for garnish)
- Salt and pepper to taste
Instructions
- Prepare all ingredients by slicing veal cutlets and chopping mushrooms and garlic.
- In a skillet over medium-high heat, combine olive oil and 1 tbsp butter until shimmering. Season veal cutlets with salt and pepper and sear for about 3 minutes on each side until golden brown. Remove from pan and set aside.
- Add remaining butter to the same skillet. Sauté mushrooms until golden brown, then add minced garlic; cook for an additional 30 seconds.
- Deglaze the pan with Marsala wine, scraping up any browned bits. Allow it to simmer slightly.
- Pour in chicken broth and simmer for about 5 minutes until the sauce thickens.
- Stir in an extra tablespoon of butter for richness, then return the veal to the pan just long enough to warm through.
- Serve hot, garnished with fresh parsley.
