  • 4 medium beets (about 1 lb)
  • 4 oz feta cheese, crumbled
  • 2 tbsp extra virgin olive oil
  • 4 cups fresh arugula
  • 2 tbsp balsamic vinegar (preferably aged)
  • ½ cup walnuts, toasted

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap each beet in foil and roast on a baking sheet for 45-60 minutes until fork-tender.
  2. While beets are roasting, whisk together olive oil and balsamic vinegar in a bowl. Season with salt and pepper to taste.
  3. In a skillet over medium heat, toast walnuts for about 5 minutes until golden brown.
  4. Sauté arugula in a large pan with a drizzle of olive oil for 2-3 minutes until just wilted.
  5. Once cooled, peel and chop the roasted beets into bite-sized pieces. In a large bowl, combine beets, sautéed arugula, toasted walnuts, and crumbled feta.
  6. Drizzle the dressing over the salad just before serving and toss gently.
