Instructions

  1. Preheat oven to 325°F (160°C).
  2. Prepare a water bath by placing ramekins in a baking dish and filling with hot water halfway up the sides.
  3. In a saucepan, combine heavy cream, milk, sugar, and salt; heat until warm but not boiling.
  4. In a bowl, whisk egg yolks; temper by gradually adding the warm cream mixture while whisking continuously.
  5. Add vanilla seeds and stir well.
  6. Pour mixture into ramekins through a fine-mesh sieve to catch lumps.
  7. Bake for 30-35 minutes, until set but slightly wobbly in the center.
  8. Cool slightly before serving warm or chilled.
