  • 1 cup quick-cooking polenta
  • 2 cups water
  • 2 cups mixed wild mushrooms (shiitake and cremini), chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • 2 tablespoons unsalted butter
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a rectangular baking dish with butter.
  2. In a large skillet over medium heat, melt butter and sauté diced onion until golden brown (about 5 minutes). Add minced garlic and wild mushrooms; cook until softened.
  3. In a separate pot, bring water to a boil. Gradually whisk in polenta, stirring continuously for about 5-7 minutes until thickened. Remove from heat and fold in heavy cream, grated Parmesan, salt, pepper, and fresh thyme.
  4. Layer half of the polenta mixture in the greased baking dish. Add half of the sautéed mushroom mixture on top. Repeat these layers with remaining ingredients.
  5. Bake uncovered for 25-30 minutes until bubbly and golden brown on top. Allow to cool slightly before serving.
