- 1 cup quick-cooking polenta
- 2 cups water
- 2 cups mixed wild mushrooms (shiitake and cremini), chopped
- 1 tablespoon fresh thyme, chopped
- 1 cup heavy cream
- 1 cup Parmesan cheese, grated
- 2 tablespoons unsalted butter
- 1 medium onion, diced
- 2 garlic cloves, minced
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and grease a rectangular baking dish with butter.
- In a large skillet over medium heat, melt butter and sauté diced onion until golden brown (about 5 minutes). Add minced garlic and wild mushrooms; cook until softened.
- In a separate pot, bring water to a boil. Gradually whisk in polenta, stirring continuously for about 5-7 minutes until thickened. Remove from heat and fold in heavy cream, grated Parmesan, salt, pepper, and fresh thyme.
- Layer half of the polenta mixture in the greased baking dish. Add half of the sautéed mushroom mixture on top. Repeat these layers with remaining ingredients.
- Bake uncovered for 25-30 minutes until bubbly and golden brown on top. Allow to cool slightly before serving.
