  • 2 medium zucchini (spiralized)
  • 1 medium red bell pepper (sliced)
  • 1 cup fresh carrots (julienned)
  • 2 green onions (chopped)
  • 1/2 cup roasted unsalted peanuts (coarsely chopped)
  • 2 large eggs (beaten)
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp freshly squeezed lime juice
  • 1 tsp fish sauce (optional)
  • 1 tsp chili paste (optional)

Instructions

  1. Spiralize the zucchini into noodle-like strands.
  2. Heat oil in a large skillet over medium heat. Add red bell pepper and carrots; sauté for about 3-4 minutes until slightly softened.
  3. Add the zoodles and garlic, stirring gently for another 2 minutes until heated but still crisp.
  4. Push veggies to one side, pour in beaten eggs on the other side, and scramble until fully cooked.
  5. Stir in soy sauce and lime juice, mixing thoroughly. Add fish sauce and chili paste if desired.
