- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 1 cup full-fat Greek yogurt
- 1 medium cucumber (diced)
- 1/4 cup fresh dill (chopped)
- Juice of 1 lemon
- 2 garlic cloves (minced)
- 1 cup cherry tomatoes (halved)
- 1/2 red onion (thinly sliced)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat grill or oven to 375°F (190°C). Season chicken with salt, pepper, and olive oil.
- Grill or bake chicken for 20-25 minutes until cooked through. Let rest before slicing.
- In a bowl, mix Greek yogurt, minced garlic, diced cucumber (excess moisture removed), chopped dill, lemon juice, salt, and pepper to create tzatziki sauce.
- In a large bowl, combine halved cherry tomatoes and red onion with olive oil; toss gently.
- Add sliced chicken to the veggies and fold together. Drizzle tzatziki sauce over the top and toss gently until combined.
