- 3–4 boneless, skinless chicken breasts (1.5 lbs)
- 4 cloves fresh garlic, minced
- 4 tbsp butter
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 8 oz fettuccine or penne pasta
- 2 cups low-sodium chicken broth
- Salt and pepper to taste
- Fresh parsley, chopped (optional)
Instructions
- Chop chicken into bite-sized pieces and mince the garlic.
- In a large pot over medium heat, melt the butter and add chicken pieces. Cook until browned and cooked through.
- Stir in minced garlic and cook for about 30 seconds until fragrant.
- Pour in heavy cream and chicken broth, then add pasta. Bring to a gentle simmer.
- Cook for 12-15 minutes, stirring occasionally until pasta is tender and absorbs flavors.
- Remove from heat and stir in freshly grated Parmesan cheese until melted and creamy. Season with salt and pepper.
