Description

Juicy, flavorful chicken with crispy skin, infused with fresh herbs and lemon—perfect for family dinners or gatherings that will impress everyone at the table.


Ingredients

  • 1 whole chicken (45 lbs)
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 4 garlic cloves, minced
  • 1 lemon, halved
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 cups carrots and potatoes, chopped (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken under cold water and pat dry with paper towels.
  3. In a bowl, mix olive oil, garlic, salt, pepper, rosemary, and thyme. Rub this mixture all over the chicken.
  4. Stuff the lemon halves and additional herb sprigs inside the cavity of the chicken.
  5. Place the chicken breast side up in a roasting pan and roast for about 1 hour 15 minutes or until the internal temperature reaches 165°F (75°C).
  6. Let it rest for 10-15 minutes before carving.
