- 1 whole chicken (4–5 lbs)
- 2 tbsp extra virgin olive oil
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 4 garlic cloves, minced
- 1 lemon, halved
- 1 tsp salt
- 1 tsp black pepper
- 2 cups carrots and potatoes, chopped (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse the chicken under cold water and pat dry with paper towels.
- In a bowl, mix olive oil, garlic, salt, pepper, rosemary, and thyme. Rub this mixture all over the chicken.
- Stuff the lemon halves and additional herb sprigs inside the cavity of the chicken.
- Place the chicken breast side up in a roasting pan and roast for about 1 hour 15 minutes or until the internal temperature reaches 165°F (75°C).
- Let it rest for 10-15 minutes before carving.
