Ingredients

  • 1 cup whole wheat flour
  • 2 tsp baking powder
  • 1 scoop (30g) protein powder
  • 1 cup plain Greek yogurt
  • 1/4 cup honey or maple syrup
  • 1/4 cup melted coconut oil or butter
  • 2 large eggs
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix rolled oats, whole wheat flour, baking powder, and protein powder.
  3. In another bowl, whisk together Greek yogurt, honey (or maple syrup), melted coconut oil (or butter), and eggs until smooth.
  4. Pour the wet mixture into the dry ingredients and fold gently until just combined. Avoid overmixing.
  5. Carefully fold in fresh blueberries until evenly distributed.
  6. Fill each muffin cup three-quarters full with batter and bake for 18-20 minutes or until golden brown.
