Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix rolled oats, whole wheat flour, baking powder, and protein powder.
- In another bowl, whisk together Greek yogurt, honey (or maple syrup), melted coconut oil (or butter), and eggs until smooth.
- Pour the wet mixture into the dry ingredients and fold gently until just combined. Avoid overmixing.
- Carefully fold in fresh blueberries until evenly distributed.
- Fill each muffin cup three-quarters full with batter and bake for 18-20 minutes or until golden brown.
