Ingredients
- 1 cup tri-color quinoa
- 1 medium English cucumber, diced
- 1 pint cherry tomatoes, halved
- 1/2 small red onion, finely diced
- 1/2 cup crumbled feta cheese (or vegan cheese)
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint leaves, chopped
- Juice and zest of 1 large lemon
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water. In a pot, combine quinoa with 2 cups of water or broth. Bring to a boil, then reduce heat to low and simmer for 15 minutes until fluffy.
- While quinoa cooks, prepare vegetables: chop cucumber and halve cherry tomatoes. Dice red onion.
- In a small bowl, whisk together olive oil, lemon juice and zest, salt, and pepper for the dressing.
- In a large bowl, fluff cooked quinoa with a fork. Add cucumber, tomatoes, red onion, feta cheese, and herbs.
- Drizzle dressing over the salad and toss gently to combine.
- Let sit for 10 minutes before serving chilled or at room temperature.
