Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and cut the Idaho potatoes into wedges.
  3. Slice the top off the garlic bulb, drizzle with olive oil, and wrap in foil.
  4. In a large bowl, combine potato wedges with olive oil, salt, pepper, and herbs. Toss to coat evenly.
  5. Spread potatoes on the baking sheet in a single layer alongside the wrapped garlic.
