Description

Ingredients

  • 1 medium head of Romanesco, cut into florets
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic, minced
  • 1/4 cup pepitas (pumpkin seeds)
  • 1 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C). Rinse Romanesco florets under cold water.
  2. In a mixing bowl, toss florets with olive oil, salt, and pepper until well-coated.
  3. Spread the florets on a baking sheet lined with parchment paper. Sprinkle minced garlic on top.
  4. Roast in the oven for 20-25 minutes until golden brown and tender.
  5. While roasting, heat a skillet over medium heat and toast pepitas for about 5 minutes until they pop and turn golden.
  6. Once the Romanesco is done roasting, drizzle lemon juice over it and sprinkle the toasted pepitas on top. Toss gently before serving.
