- 1 medium head of Romanesco, cut into florets
- 2 tbsp extra virgin olive oil
- 2 cloves garlic, minced
- 1/4 cup pepitas (pumpkin seeds)
- 1 tbsp freshly squeezed lemon juice
- Salt and pepper to taste
Instructions
- Preheat oven to 425°F (220°C). Rinse Romanesco florets under cold water.
- In a mixing bowl, toss florets with olive oil, salt, and pepper until well-coated.
- Spread the florets on a baking sheet lined with parchment paper. Sprinkle minced garlic on top.
- Roast in the oven for 20-25 minutes until golden brown and tender.
- While roasting, heat a skillet over medium heat and toast pepitas for about 5 minutes until they pop and turn golden.
- Once the Romanesco is done roasting, drizzle lemon juice over it and sprinkle the toasted pepitas on top. Toss gently before serving.
