Description

Ingredients

  • 1 (14.75 oz) can high-quality salmon, drained and flaked
  • 1 cup plain or seasoned breadcrumbs
  • 2 medium eggs
  • 2 tbsp fresh dill, chopped
  • 1 small onion, finely chopped
  • 2 tbsp lemon juice (freshly squeezed)
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Flake the canned salmon into a large bowl.
  2. In a skillet with oil, sauté the chopped onion over medium heat for about 4-5 minutes until translucent. Add fresh dill for the last minute.
  3. In the bowl with the salmon, combine sautéed onions, breadcrumbs, eggs, lemon juice, salt, and pepper. Mix gently until just combined.
  4. Form the mixture into small patties about 1 inch thick and place them on a plate.
  5. Heat oil in a skillet over medium heat. Fry the patties in batches for 3-4 minutes per side until golden brown and crispy.
  6. Transfer to paper towels to drain excess oil and enjoy warm with your favorite dipping sauce.
