- 1 (14.75 oz) can high-quality salmon, drained and flaked
- 1 cup plain or seasoned breadcrumbs
- 2 medium eggs
- 2 tbsp fresh dill, chopped
- 1 small onion, finely chopped
- 2 tbsp lemon juice (freshly squeezed)
- Salt and pepper to taste
- Oil for frying
Instructions
- Flake the canned salmon into a large bowl.
- In a skillet with oil, sauté the chopped onion over medium heat for about 4-5 minutes until translucent. Add fresh dill for the last minute.
- In the bowl with the salmon, combine sautéed onions, breadcrumbs, eggs, lemon juice, salt, and pepper. Mix gently until just combined.
- Form the mixture into small patties about 1 inch thick and place them on a plate.
- Heat oil in a skillet over medium heat. Fry the patties in batches for 3-4 minutes per side until golden brown and crispy.
- Transfer to paper towels to drain excess oil and enjoy warm with your favorite dipping sauce.
