  • 2 lbs pork belly, well-marbled
  • 8 slider buns
  • 4 cloves garlic, minced
  • 1/4 cup brown sugar
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp apple cider vinegar
  • 2 inches fresh ginger, grated
  • 3 green onions, chopped

Instructions

  1. Preheat your oven to 300°F (150°C). Pat the pork belly dry and score it in a crisscross pattern.
  2. In a skillet over medium-high heat, sear the pork belly on both sides until golden brown.
  3. Add minced garlic and grated ginger to the skillet until fragrant. Pour in soy sauce and apple cider vinegar and stir well.
  4. Transfer to an oven-safe dish or Dutch oven, adding enough water to cover half of the pork belly. Cover tightly with foil and braise for about 3 hours until fork-tender.
  5. Let the pork cool slightly before shredding into bite-sized pieces. Drizzle some reserved braising liquid over the shredded pork.
  6. Assemble by placing generous amounts of pulled pork onto each slider bun and topping with chopped green onions. Serve immediately!
