- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 12 oz pappardelle pasta
- 28 oz canned diced tomatoes
- 1 cup fresh basil leaves
- 4 garlic cloves, minced
- 2 tbsp extra virgin olive oil
- 1 medium yellow onion, diced
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Chop onion and garlic finely.
- Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then cook until golden brown, about 6 minutes per side. Remove from skillet.
- In the same skillet with drippings, sauté onion and garlic until fragrant, about 3 minutes.
- Add diced tomatoes and juices; stir well and simmer for 10 minutes until slightly thickened.
- Return chicken to skillet with fresh basil. Cook on low heat while boiling pappardelle according to package instructions.
- Drain pappardelle when al dente and toss with chicken-tomato mixture. Top with grated Parmesan before serving.
