Ingredients

Scale
  • 1 pound pork tenderloin
  • 2 tablespoons fresh grated ginger
  • 3 tablespoons freshly squeezed lime juice
  • 1 can (14 ounces) coconut milk
  • 1 cup jasmine rice
  • 2 cloves garlic, minced
  • 1 tablespoon brown sugar

Instructions

  1. In a bowl, mix together grated ginger, minced garlic, brown sugar, and lime juice to create the marinade.
  2. Place the pork tenderloin in a resealable bag, pour the marinade over it, seal tightly, and refrigerate for at least 1 hour.
  3. In a saucepan, combine jasmine rice, coconut milk, and 1 cup of water. Bring to a boil, then reduce heat to low and simmer covered for about 15 minutes until fluffy.
  4. Preheat your grill to medium-high heat. Remove pork from marinade (discard any leftovers) and grill for 5-6 minutes on each side until the internal temperature reaches 145°F.
  5. Let the pork rest for 5 minutes before slicing into medallions.
  6. Fluff the coconut rice and serve it with sliced pork, garnished with extra lime wedges if desired.
