Ingredients

Scale
  • 1 lb pork tenderloin
  • 1 ripe mango, diced
  • 1 cup fresh pineapple, diced
  • 1/4 cup red onion, finely diced
  • 2 tbsp freshly squeezed lime juice
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pat the pork tenderloin dry and season generously with salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the pork on all sides until golden brown (about 3-4 minutes per side).
  4. Transfer the skillet to the oven and bake for 20-25 minutes until the internal temperature reaches 145°F (63°C). Let it rest for at least 5 minutes before slicing.
  5. While the pork bakes, mix diced mango, pineapple, red onion, cilantro, and lime juice in a bowl for the salsa.
  6. Slice the rested pork tenderloin and serve topped with mango-pineapple salsa.
