Description

  • 1 cup pearl barley
  • 2 cups vegetable broth (low-sodium)
  • 2 cups mixed mushrooms (cremini and shiitake), chopped
  • 1 head garlic
  • 2 tbsp olive oil
  • 1/4 cup fresh parsley or thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Toss chopped mushrooms with 1 tablespoon olive oil, salt, and pepper on a baking sheet. Roast for 20 minutes until golden brown.
  2. In a pot, bring vegetable broth to a simmer. Add pearl barley and cook for 30–40 minutes until tender.
  3. Slice off the top of the garlic head, drizzle with 1 tablespoon olive oil, wrap in foil, and roast alongside mushrooms for about 30 minutes until soft.
  4. Once cooked, combine roasted mushrooms and squeezed garlic into the pot with barley. Stir well to blend flavors.
  5. Finish with freshly chopped herbs before serving hot.
