Description

Tuscan Chicken Pinwheels are a flavorful Italian-inspired dish that brings the taste of the Mediterranean straight to your table. Ingredients

  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/2 cup oil-packed sun-dried tomatoes, drained and chopped
  • 1/2 cup fresh basil leaves
  • 1 cup shredded mozzarella cheese
  • 2 tsp extra virgin olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. Pound chicken breasts to about half an inch thick for even cooking.
  3. Season both sides of each breast with garlic powder, salt, and pepper.
  4. Layer sun-dried tomatoes, basil leaves, and mozzarella evenly over each breast. Roll tightly from one end and secure with toothpicks.
  5. Place pinwheels seam-side down in the baking dish, drizzle with olive oil, and bake for 25-30 minutes or until golden brown and cooked through.
  6. Allow to rest for five minutes before slicing into pinwheels and serving warm.
