- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1/2 cup oil-packed sun-dried tomatoes, drained and chopped
- 1/2 cup fresh basil leaves
- 1 cup shredded mozzarella cheese
- 2 tsp extra virgin olive oil
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- Pound chicken breasts to about half an inch thick for even cooking.
- Season both sides of each breast with garlic powder, salt, and pepper.
- Layer sun-dried tomatoes, basil leaves, and mozzarella evenly over each breast. Roll tightly from one end and secure with toothpicks.
- Place pinwheels seam-side down in the baking dish, drizzle with olive oil, and bake for 25-30 minutes or until golden brown and cooked through.
- Allow to rest for five minutes before slicing into pinwheels and serving warm.
