Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 large onion, sliced
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fajita seasoning
  • 8 flour or corn tortillas
  • Fresh cilantro (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice chicken into strips; chop bell peppers and onion.
  3. In a large bowl, toss chicken and veggies with olive oil and fajita seasoning until evenly coated.
  4. Spread mixture on a lined baking sheet in a single layer.
  5. Bake for 20-25 minutes until chicken is cooked through and veggies are tender.
  6. Toss the mixture before serving hot on warmed tortillas with optional toppings.
