Description

Slow-Cooker Beef Stroganoff is a hearty dish featuring tender beef in a rich, creamy sauce served over egg noodles. Perfect for cozy family dinners or busy weeknights.

  • 2 lbs beef chuck roast
  • 1 medium onion, chopped
  • 8 oz fresh mushrooms, sliced
  • 2 cups low-sodium beef broth
  • 1 cup full-fat sour cream
  • 8 oz egg noodles
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tsp garlic powder
  • 1 tsp smoked paprika

Instructions

  1. Brown the beef chuck roast in a skillet over medium-high heat until seared on all sides (about 4-5 minutes per side).
  2. Place the browned beef in the slow cooker along with chopped onions, sliced mushrooms, garlic powder, Worcestershire sauce, Dijon mustard, and smoked paprika.
  3. Pour enough beef broth to cover the ingredients slightly.
  4. Cook on low for 6-8 hours or high for 3-4 hours until the meat is fork-tender.
  5. Stir in sour cream about 30 minutes before serving to create a creamy sauce.
  6. Serve over cooked egg noodles or mashed potatoes.
