Ingredients

  • 1 medium onion, finely chopped

  • 2 cups low-sodium chicken broth

  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika

Instructions

  1. Chop the onion and mince the garlic.
  2. Heat a large skillet over medium-high heat; sear chicken thighs for about 5 minutes per side until golden brown.
  3. Add chopped onion and minced garlic; sauté until onions are translucent, about 3-4 minutes.
  4. Pour in chicken broth, scraping up any browned bits from the pan, then stir in heavy cream, salt, pepper, and paprika.
  5. Add uncooked rice; gently stir to combine. Bring to a simmer, then reduce heat to low.
  6. Cover and cook for 20-25 minutes until rice is tender and liquid is absorbed. Stir halfway through cooking.
  7. Serve warm, plating generous portions of chicken over fluffy rice.
