- 2 ripe peaches, diced
- 2 fresh jalapeños, chopped (seeds removed for milder flavor)
- 2 tbsp honey
- 3 cloves garlic, minced
- 2 tbsp lime juice (freshly squeezed)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a bowl, mix olive oil, lime juice, minced garlic, honey, chopped jalapeños, diced peaches, salt, and pepper until well combined.
- Place chicken breasts in a resealable bag or dish and pour marinade over them. Seal and marinate for at least one hour (or longer if time permits).
- Preheat grill to medium-high heat (375°F/190°C). Remove chicken from marinade and shake off excess. Grill each side for 6-7 minutes or until they reach an internal temperature of 165°F (75°C).
- While grilling, simmer leftover marinade in a saucepan on low heat for about five minutes to create a sauce.
- Let grilled chicken rest for five minutes before slicing. Serve with warm sauce drizzled on top.
