  • ⅓ cup vegetable oil

  • ½ cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt until well combined.
  3. In another bowl, mix pumpkin puree, eggs, vegetable oil, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not overmix.
  5. In a small bowl, blend softened cream cheese with powdered sugar until smooth.
  6. Spoon half of the muffin batter into each liner. Add about a tablespoon of cream cheese filling in each cup before topping with remaining batter.
  7. Bake for 20-25 minutes or until golden brown. Enjoy warm or at room temperature.
