Instructions

- In another bowl, mix pumpkin puree, eggs, vegetable oil, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not overmix.
- In a small bowl, blend softened cream cheese with powdered sugar until smooth.
- Spoon half of the muffin batter into each liner. Add about a tablespoon of cream cheese filling in each cup before topping with remaining batter.
