Description

Strawberry Rhubarb Pie is a delightful fusion of sweet strawberries and tangy rhubarb enveloped in a flaky crust, making it the perfect dessert for any gathering or cozy evening at home.

  • 2 cups rhubarb stalks, chopped
  • 1 cup granulated sugar
  • ¼ cup all-purpose flour
  • 1 tbsp lemon juice
  • 1 tsp baking powder
  • ½ cup unsalted butter, softened
  • 1 pre-made pie crust (or homemade)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, mix together strawberries, rhubarb, sugar, flour, and lemon juice until well combined.
  3. Roll out the pie crust on a floured surface and transfer it into a pie pan.
  4. Pour the filling into the prepared crust. Top with another layer of dough or create a lattice design.
  5. Bake for 15 minutes at 425°F (220°C), then reduce temperature to 350°F (175°C) and bake for an additional 35-40 minutes until golden brown.
