Ingredients

  • 1 lb fresh jalapenos (about 1012 peppers)
  • 2 cups granulated sugar
  • 1 cup cider vinegar
  • 1 cup water
  • 4 cloves garlic (whole)
  • 2 tsp pickling spice

Instructions

  1. Slice fresh jalapenos into rings, keeping seeds for extra heat if desired.
  2. In a medium saucepan over medium heat, combine water, sugar, vinegar, garlic, and pickling spice. Stir until the sugar dissolves completely.
  3. Add sliced jalapenos to the bubbling brine and simmer for 5-10 minutes until they become glossy.
  4. Remove from heat; allow to cool in the pot for 30 minutes.
  5. Transfer jalapenos and syrup to sterilized jars while warm and seal tightly.
  6. Refrigerate for at least 24 hours before enjoying.
