- 8 large flour tortillas
- 1 can (4 oz) canned green chiles
- 1 packet taco seasoning
- 2 cups shredded cheese (cheddar and Monterey Jack mix)
- 2 cups enchilada sauce (store-bought or homemade)
- Sour cream and fresh cilantro for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat and stir in taco seasoning and green chiles until well combined.
- Spoon about ¼ cup of the beef mixture onto each tortilla, roll tightly, and place seam-side down in a greased baking dish.
- Pour enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
- Bake for 20-25 minutes until the cheese is bubbly and golden brown.
- Garnish with sour cream and cilantro before serving.
