Description

Tex-Mex Beef Enchiladas are a delightful combination of seasoned beef, melted cheese, and zesty enchilada sauce, wrapped in soft tortillas—perfect for any family gathering or casual dinner.


Ingredients

  • 1 lb lean ground beef
  • 8 large flour tortillas
  • 1 can (4 oz) canned green chiles
  • 1 packet taco seasoning
  • 2 cups shredded cheese (cheddar and Monterey Jack mix)
  • 2 cups enchilada sauce (store-bought or homemade)
  • Sour cream and fresh cilantro for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat and stir in taco seasoning and green chiles until well combined.
  3. Spoon about ¼ cup of the beef mixture onto each tortilla, roll tightly, and place seam-side down in a greased baking dish.
  4. Pour enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
  5. Bake for 20-25 minutes until the cheese is bubbly and golden brown.
  6. Garnish with sour cream and cilantro before serving.
