- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup plain Greek yogurt
- 1 medium cucumber, diced
- 1 cup cherry tomatoes, halved
- 2 tbsp fresh dill, chopped
- Juice of 1 lemon
- 2 garlic cloves, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Season the chicken breasts with salt and pepper. Grill over medium-high heat for 6-7 minutes per side until cooked through (165°F internally). Allow to rest before slicing.
- In a bowl, mix Greek yogurt, lemon juice, minced garlic, dill, olive oil, salt, and pepper until smooth.
- Chop the grilled chicken into bite-sized pieces. Combine with diced cucumber and halved cherry tomatoes in the bowl with dressing. Toss gently to coat.
- Chill in the refrigerator for 30 minutes to allow flavors to meld before serving.
