Description

This refreshing Tzatziki Chicken Salad combines juicy grilled chicken, creamy yogurt dressing, and crisp vegetables for a light and flavorful meal, perfect for sunny days.


Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup plain Greek yogurt
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 2 tbsp fresh dill, chopped
  • Juice of 1 lemon
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt and pepper. Grill over medium-high heat for 6-7 minutes per side until cooked through (165°F internally). Allow to rest before slicing.
  2. In a bowl, mix Greek yogurt, lemon juice, minced garlic, dill, olive oil, salt, and pepper until smooth.
  3. Chop the grilled chicken into bite-sized pieces. Combine with diced cucumber and halved cherry tomatoes in the bowl with dressing. Toss gently to coat.
  4. Chill in the refrigerator for 30 minutes to allow flavors to meld before serving.
