  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 6 cups low-sodium chicken broth
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon freshly ground black pepper
  • 2 bay leaves

Instructions

  1. Prepare your ingredients by dicing the onions, carrots, and celery to ensure even cooking.
  2. Heat a large pot over medium heat with a drizzle of olive oil. Sear the chicken breasts for about 5 minutes on each side until golden brown. Remove from pot.
