Ingredients

  • 2 large Russet potatoes
  • 8 oz sirloin or ribeye steak
  • 1 cup shredded sharp cheddar cheese
  • ½ cup full-fat sour cream
  • ¼ cup chopped chives or green onions
  • ¼ cup crispy bacon bits
  • 2 tbsp unsalted butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Clean the russet potatoes and dry them with paper towels.
  2. Poke holes in the potatoes with a fork and bake directly on the oven rack for 45-60 minutes until tender.
  3. While baking, heat a skillet over medium-high heat. Season steak chunks with salt and pepper, then sear for about 4-5 minutes until browned but juicy. Set aside.
  4. Once the potatoes are done, let them cool slightly. Slice open lengthwise and fluff the insides with a fork.
  5. Add butter, followed by cheddar cheese, steak bites, bacon bits, sour cream, and chives on top.
