- 2 large Russet potatoes
- 8 oz sirloin or ribeye steak
- 1 cup shredded sharp cheddar cheese
- ½ cup full-fat sour cream
- ¼ cup chopped chives or green onions
- ¼ cup crispy bacon bits
- 2 tbsp unsalted butter
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C). Clean the russet potatoes and dry them with paper towels.
- Poke holes in the potatoes with a fork and bake directly on the oven rack for 45-60 minutes until tender.
- While baking, heat a skillet over medium-high heat. Season steak chunks with salt and pepper, then sear for about 4-5 minutes until browned but juicy. Set aside.
- Once the potatoes are done, let them cool slightly. Slice open lengthwise and fluff the insides with a fork.
