  • 2 packs ramen noodles (discard seasoning)
  • 2 cups shredded green cabbage
  • 1 cup grated carrots
  • 1 cup chopped red and yellow bell peppers
  • 1/2 cup sliced green onions
  • 1/4 cup rice vinegar
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp honey

Instructions

  1. Cook ramen noodles according to package instructions (about 3 minutes). Drain and rinse under cold water.
  2. While noodles cool, prepare veggies by shredding cabbage, grating carrots, and chopping bell peppers.
  3. In a bowl or mason jar, whisk together rice vinegar, soy sauce, sesame oil, and honey until well combined.
  4. In a large mixing bowl, combine cooled noodles with veggies. Drizzle dressing over the top and toss to coat.
