  • 1 cup fresh sweet corn (or frozen corn, thawed)
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup diced red onion
  • 1/4 cup freshly squeezed lime juice
  • 1/2 cup mayonnaise (or Greek yogurt)
  • 1 teaspoon chili powder
  • 4 ounces crumbled feta cheese

Instructions

  1. Cook rotini pasta in salted boiling water until al dente (about 8-10 minutes). Drain and rinse under cold water.
  2. Grill or boil the corn until tender (5-7 minutes). Let it cool before cutting off the kernels.
  3. In a large bowl, whisk together mayonnaise, lime juice, chili powder, salt, and pepper until smooth.
  4. Add cooked pasta, corn kernels, cilantro, red onion, and feta cheese to the bowl. Toss gently until well-coated.
  5. Chill in the refrigerator for at least one hour before serving.
