Ingredients

  • 14 oz firm tofu
  • 4 cups mixed greens (romaine, spinach, arugula)
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1 red bell pepper, thinly sliced
  • ¼ cup fresh cilantro, chopped
  • ¼ cup fresh mint, chopped
  • 3 tbsp lime juice (freshly squeezed)
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp creamy peanut butter

Instructions

  1. Press the tofu by wrapping it in paper towels and placing a weight on top for about 15 minutes to remove excess moisture.
  2. While pressing the tofu, chop the mixed greens, halve the cherry tomatoes, dice the cucumber, and slice the red bell pepper. Roughly chop the herbs.
  3. Heat oil in a skillet over medium heat. Cut the pressed tofu into cubes and sauté until golden brown on all sides (about 5 minutes).
  4. In a small bowl, whisk together lime juice, soy sauce, and peanut butter until smooth.
  5. In a large bowl, combine all chopped vegetables and cooked tofu. Drizzle with dressing and toss gently to coat.
  6. Serve immediately or store components separately for meal prep.
