  • 1 cup all-purpose flour
  • 2 tsp Cajun seasoning (plus more for coating)
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 4 brioche buns
  • 3 cloves fresh garlic, minced
  • 1/2 cup mayonnaise
  • 2 tbsp freshly squeezed lemon juice
  • Fresh parsley for garnish (optional)

Instructions

  1. Pound chicken breasts to an even thickness of about half an inch.
  2. Set up a dredging station: one bowl with seasoned flour, another with beaten eggs, and a third with panko mixed with Cajun seasoning.
  3. Dredge each chicken breast in the flour, dip in the egg wash, then coat thoroughly in panko breadcrumbs. Set aside on a wire rack.
  4. Heat oil in a skillet over medium-high heat (about 350°F). Fry chicken for 5-7 minutes per side until golden brown and cooked through.
  5. In a small bowl, combine mayonnaise, minced garlic, lemon juice, salt, and pepper to make the aioli.
  6. Toast brioche buns lightly and spread aioli on both sides before adding the crispy chicken.
