  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 tbsp fresh lemon juice
  • 4 cloves garlic, minced
  • 3 tbsp extra virgin olive oil
  • 2 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  3. Place the chicken in a resealable bag or shallow dish; pour the marinade over it. Seal or cover and marinate in the fridge for at least 1 hour (overnight recommended).
  4. Arrange the marinated chicken in the prepared baking dish and pour any remaining marinade over the top.
  5. Bake for 25-30 minutes until cooked through (internal temperature should reach 165°F).
  6. Let rest for 5 minutes before slicing and serving.
