Prepare the Filling
- In a bowl, combine the diced apples, lemon juice, cinnamon, and brown sugar. Stir until well mixed.
- Let the mixture sit for about 10 minutes to allow the flavors to meld.
Assemble the Taquitos
- Place a tortilla on a flat surface, and spoon about 2-3 tablespoons of the apple filling onto the center.
- Drizzle a little caramel sauce over the apple filling.
- Roll the tortilla tightly around the filling, tucking in the sides as you go to make a taquito.
- Repeat with the remaining tortillas and filling.
Fry the Taquitos
- In a large skillet, heat the vegetable oil over medium heat until hot.
- Carefully place 2-3 taquitos in the oil, seam side down, and fry until golden brown, about 3-4 minutes.
- Turn them halfway through to ensure even cooking.
- Remove taquitos from the skillet and place them on paper towels to drain excess oil.
Finish and Serve
- In a small bowl, mix the sugar and cinnamon for sprinkling.
- Sprinkle the cinnamon sugar over the warm taquitos.
- Serve warm, drizzled with additional caramel sauce if desired.
