Ingredients
  

For the Filling
  • 3 medium apples peeled, cored, and diced
  • 1 tablespoon lemon juice to prevent browning
  • 1 teaspoon cinnamon
  • 1 tablespoon brown sugar
  • 1 cup caramel sauce for drizzling and filling
For the Taquitos
  • 8 flour tortillas tortillas
  • 1 cup vegetable oil for frying
  • 1 tablespoon sugar for sprinkling
  • 1 teaspoon cinnamon for sprinkling

Method
 

Prepare the Filling
  1. In a bowl, combine the diced apples, lemon juice, cinnamon, and brown sugar. Stir until well mixed.
  2. Let the mixture sit for about 10 minutes to allow the flavors to meld.
Assemble the Taquitos
  1. Place a tortilla on a flat surface, and spoon about 2-3 tablespoons of the apple filling onto the center.
  2. Drizzle a little caramel sauce over the apple filling.
  3. Roll the tortilla tightly around the filling, tucking in the sides as you go to make a taquito.
  4. Repeat with the remaining tortillas and filling.
Fry the Taquitos
  1. In a large skillet, heat the vegetable oil over medium heat until hot.
  2. Carefully place 2-3 taquitos in the oil, seam side down, and fry until golden brown, about 3-4 minutes.
  3. Turn them halfway through to ensure even cooking.
  4. Remove taquitos from the skillet and place them on paper towels to drain excess oil.
Finish and Serve
  1. In a small bowl, mix the sugar and cinnamon for sprinkling.
  2. Sprinkle the cinnamon sugar over the warm taquitos.
  3. Serve warm, drizzled with additional caramel sauce if desired.

Notes
