Ingredients
  

For the Base
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1 large egg
  • 1 cup grated carrots
  • 1/2 cup walnuts chopped
  • 1/2 cup raisins
For the Frosting
  • 8 ounces cream cheese softened
  • 1/4 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Making the Cookies
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream together the brown sugar, granulated sugar, and softened butter until light and fluffy.
  4. Add the egg and grated carrots to the butter mixture and mix until well combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the walnuts and raisins.
  6. Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Making the Frosting
  1. In a medium bowl, beat together the softened cream cheese and butter until smooth.
  2. Gradually add the powdered sugar and vanilla extract, mixing until well combined and fluffy.
  3. Once the cookies are completely cooled, spread a generous layer of frosting on top of each cookie.
